Apple and Courgette Cake

Apple and courgette are a match made in heaven when it comes to baking. This cake is simple to make, uses healthy ingredients, and tastes divine!



Ingredients
2 courgettes (zucchini)
2 large apples
Half teaspoon ground nutmeg
3 eggs
150g honey
150g self raising flour/spelt flour and tsp baking powder
125ml extra virgin olive oil

Method
Whisk the eggs and oil together in a bowl, sift the flour in, combine and grate the courgettes and apples on top.



Fold together using a spoon.



Pour into a baking-paper lined cake tin.



Bake for 40 minutes at 160 degrees/gas mark 3.

Remove from the oven and allow to cool for 30 minutes.



Tuck in as and when you please.



This works well for breakfast because of the low sugar content and fibrous attributes - which is exactly what my friend did on her birthday morning when I bought this round!
