This apricot chicken is a simple and tasty meal. I use apricot halves in natural juice, a salt reduced onion soup and curry powder to make it taste delicious. You can use skinless chicken drumsticks to make it healthier.

Apricot chicken, rice and coriander

Cooking Time: 80 - 90 minutes
Serves: 4
Ingredients
8 chicken drumsticks
2 cans apricot halves in natural juice
1 packet salt reduced onion soup (gluten free if required)
1/2 tablespoon curry powder (optional)
Rice, to serve
Coriander, to serve
Method
Preheat the oven to 160C.
Sear the outside of the chicken drumsticks in a pan until lightly browned.
Place the drumsticks in a baking dish, sprinkle the onion soup, curry powder, apricot halves and juice over the top.

Ready to bake
Cover with foil and bake for 1 hour 20 minutes or until the chicken is cooked through.
Serve with rice and coriander.
