Asparagus: A complete guide

Considered to be one of the delicacies of the vegetable kingdom, asparagus is a nutrient rich, distinctly flavoursome addition to any diet.

The most common variety is green in colour, however, you can also find white and purple hued spears.

Important source of inulin which supports healthy digestion.
Rich source of vitamin K required for good bone health and density.
Rich source of folate, an essential nutrient during pregnancy.
Rich source of vitamin E promoting healthy skin and eyes.

How to enjoy
Toss chopped spears through a salad or pasta.
Blanched and served as a side to cooked tofu or meat.
Throw through a stir fry with veggies, tofu, or lean meat.
Roasted with other mixed veg, garlic and fresh herbs.

Choose thin, firm shoots deep in colour, and consume within one or two days for the best texture and taste. Store either wrapped in damp kitchen paper, or in a glass of cool water and refrigerated.
