Balsamic Tuna and Spinach Salad

Instead of going for the Christmas flavours at this time of year, maybe give it a night off, and just once this week try something different. Tuna and spinach are a match made in heaven. Lightly seasoned and simply cooked, this steamed balsamic tuna and spinach salad is ready to eat in 10 minutes. Better than slaving over a hot stove, which is what you might be doing the rest of the festive season...



Preparation Time: 3 minutes
Cooking Time: 10 minutes
Makes: 1 adult serving

Ingredients
1 tuna fillet
Half an avocado
Head of fresh spinach
Sprig of rosemary
Fresh parsley
1 tablespoon balsamic vinegar
Half teaspoon ground black pepper

Method
Place the tuna in a sieve with the seasoning and place on top of a



Wash the spinach and layer on a plate.



Season the spinach and add the oil.



Remove the tuna from the sieve.



Add the tuna to the plate of spinach and add the avocado.



Add the balsamic vinegar.



Serve.
