These healthy, tasty muffins are great for breakfast or as a snack. They are refined sugar free and can be made gluten and lactose free. Enjoy!

These muffins are great for breakfast or as a snack
Preparation Time: 5 minutes
Cooking Time: 25 minutes
Serves: 12
Ingredients
2 ripe bananas
4 weetbix, crushed (gluten free, if required)
3/4 cup milk (lactose free, if required)
3/4 cup desiccated coconut
3/4 cup self raising flour (gluten free, if required)
1 tablespoon vanilla essence
1/2 teaspoon baking powder
2 eggs
250 g strawberries, cut into halves
3 tbsp oil
Method
Preheat the oven to 180 degrees. Line a 12 pan muffin tray with patty liners or squares of baking paper.
Mash the bananas in a bowl.
Add the weetbix, milk and stir to combine. Stand for 10 minutes.
Stir in the desiccated coconut, flour, baking powder and vanilla essence.
In a separate bowl combine the eggs and oil and add to the weetbix mixture to make the batter.
Add the strawberries and stir to combine.
Spoon the batter into the patty liners and bake for 20-25 minutes until a skewer comes out clean.
