One of my favourite go-to lunchtime meals, I love that I can simply throw this in the oven, top and serve.
Feel free to change up any of the ingredients if you would like, and according to what you have on hand. The pesto can be replaced with hummus (it's equally amazing), and any bean can be used (edamame are our favourite). If you would prefer a regular potato instead, go for it!
Protein, fats and carbohydrates all in one healthy, easy meal!
Ingredients 1 small sweet potato, sliced lengthways
1 tablespoon coconut olive oil
3/4 cup beans, cooked, rinsed, drained
1/4 cup vegan pesto (or pesto of choice)
Preheat oven to 200C.
Place the sweet potato on a lined baking tray and drizzle over the oil.
Roast in the oven for 30 minutes or until golden brown and tender.
