Once you have gotten to the stage where you are ready to hire your kitchen staff, ensure you have diversity. The client base you will be serving is conscientious, and they will be impressed with a wide variety of cultures, tastes, and availability. For example, you don't want to hire an all-vegetarian staff. A wide array of personalities best enhances your ability to reach a more open audience.

Develop relationships with area farmers to get the best deals and establish a regular routine.
