It is well known that spices have many health benefits. They help to burn fat and boost metabolism, stabilise blood sugar, calm inflammations, and fight dangerous pathogens like viruses, bacteria and fungi.
This soup recipe contains ginger, turmeric, cumin and curry powder, which not only boost the metabolism but also improves skin clarity and helps to slow down the aging process.
Ingredients: 1 tablespoon coconut oil
1 medium onion, chopped
3 garlic gloves, minced
2 teaspoons finely chopped ginger
2 teaspoons curry powder
2 teaspoons cumin
1 large head cauliflower, roughly chopped
˝ cup coconut milk
2 cups vegetable stock
Sea salt and ground black pepper to taste
Chopped spring onion and fresh dill to garnish
In a soup pan, over a medium heat, melt the coconut oil and fry the onion until browned.
Add the garlic, ginger, turmeric, curry powder, cumin and stir the ingredients for about a minute.
Add the cauliflower, coconut milk, vegetable stock and sea salt.
Bring the soup to a boil. Reduce the heat, cover the pan and simmer for about 30 minutes.
When serving, garnish the soup with ground black pepper, spring onion and fresh dill.
