Energy balls are great when you are in a rush and don’t have time to eat, or you just want a healthy snack that’s delicious and good for you.
300g of pitted dates
100g of almonds
2 tablespoons of chia seeds
4 dried apricots
In a small food processor add the almonds and blend until you reach the desired consistency. I like mine to have some texture. Now add the rest of the ingredients and blend until it forms a dough consistency.
Take out small scoops and form little balls until you finish the entire dough.
You can put them in the fridge and enjoy throughout the week or you can freeze them. I like to make a bigger batch and freeze them to always have on hand.
