Try these protein packed, healthy, and tasty breakfast or brunch treats. The good news is that these pancakes are gluten free (using almond meal) and dairy free (using almond milk), and very easy to prepare and cook. Cacao and chia seeds are a great superfood combination and you can just drizzle your favorite stewed fruit or good old maple syrup on top. I like to use sweet sunny strawberries (locally grown) for our topping, and to entice the fussy eaters in the household.
Ingredients for pancakes
1.5 cups almond meal
1 teaspoon vanilla extract
2 tablespoons maple syrup
1/2 cup almond milk
1 tablespoon coconut oil
3 tablespoons cacao powder
1 tablespoon chia seeds
1/2 cup stewed or fresh fruit (optional topping)
Chocolate chia mixture
Step one: mix together all the ingredients in a large mixing bowl.
Cooking the pancake
Step two: place one teaspoon of coconut oil in a heated fry pan. Then drizzle a spoonful of mixture onto the fry pan.

Step three: flip the pancake over to cook the other side, then cook the rest of the mixture into a delicious gluten free stack.
Drizzle with stewed fruit or maple syrup
Step four: serve hot and add maple syrup or some prepared stewed (or fresh) fruit. You can also add some cream or yogurt if you are not dairy free.
