Nut butters are the heroes of any vegetarian or healthy diet. They are an indulgent feature of my diet these days, just because I find them so moreish and sumptuous.
Nut butters are great, but they can also be quite expensive. Instead of spending a lot of money on nut butters, save the money and spend no more than 10 minutes making this delicious coconut cashew and almond butter.
Ingredients
50g almonds
50g cashews
1 tablespoon virgin coconut oil

Method
Place the nuts on a baking tray with the coconut oil.
Place in a food processor.
Blitz on high for 5 minutes. Scrape down the sides if necessary.
When smooth pour into a ramekin/suitable receptacle.
Store in the fridge, or cover and keep in the cupboard.
