Here is a dessert, or breakfast treat that involves no cooking whatsoever, is gluten free and packed full of protein, nutrients and
antioxidants. It sounds too good to be true, but it also tastes fantastic. The flavor reminds me of a creamy custard or maybe tapioca pudding.

Coconut, Strawberry & Chia Puddings
Chia seeds themselves can easily be found in the health food section of your local supermarket, however they originate from Mexico, where the Mayan people have been consuming them for thousands of years.

Chia seeds from the supermarket
Ingredients
1 cup coconut milk
2 tablespoons chia seeds
1 tablespoon maple syrup or honey (optional)
2 tablespoons strawberry pulp (optional)

Add the chia seeds to the coconut milk
Method
Pour the coconut milk into a jar with a screw top lid.

Chia seed mixture
Add the chia seeds, and maple syrup or honey, then replace the lid and shake the jar well. The recipe will turn out fine without any sweetener, if you prefer just the coconut flavor on its own.

Shake the mixture
Let the sealed jar sit in the fridge for 2 - 3 hours, so that the chia seeds absorb the coconut liquid. They should expand to four times their original size and become translucent and gelatinous.

Spoon the mixture into glasses
Add the strawberry pulp to the bottom of a glass (optional) and spoon the coconut and chia seed mixture on top.
