Cucumbers can sometimes be seen as a bit
'meh', but there is a lot to
love about this crisp, distinctive fruit (and yes, cucumbers are technically a
fruit!)
There are
three types of cucumber to enjoy:
slicing,
seedless and
pickling.

Health benefits
Rich source of vitamin K, building bone and other bodily tissue.
Good source of vitamin C, aiding collagen production.
Good source of copper, generating energy and preventing against anemia.
Good source of potassium, developing muscle tissue.
Mostly water and low in calories, making a great addition to all diets.

How to enjoy
Sliced into sticks and enjoyed with hummus or peanut butter.
Wrapped up in homemade sushi.
Mixed through a fresh veggie salad (perhaps a Greek salad if you're feeling fancy!)
Buy (or make) pickled and add to sandwiches, burgers and wraps.
Finely sliced and placed in water, or blended into fresh juices or smoothies.
