Easy refreshing salad

We are officially in the first month of autumn but summer is having its last hurrah and it's hot! Itís definitely too hot to slave over a hot stove so here is a light and refreshing salad which is quick and easy to make. Better yet, itís a great accompaniment to any BBQ meat skewer or tinned tuna.



Preparation time: 30 Minutes
Serves: 3-4 People



SALAD INGREDIENTS

1 cup corn kernels

2 whole beets (sliced or cubed)

1 orange (peeled and cubed)

1 cup quinoa (cook as per directions on packet)

3 cups spinach (washed)

1 carrot (julienne)

5 Roma or cherry tomatoes (quartered)

1 boiled egg (sliced)

Some chives

DRESSING

2 table spoons of garlic infused olive oil (makes any salad delicious)

Quarter lemon



METHOD

Toss your salad together, add the dressing, some salt and pepper to taste and voila! For a bit of crunch I like to add a few flakes of roasted almond.

Enjoy either on its own or add some tinned tuna or BBQ skewers for a more substantial meal.
