Is eggplant (aubergine) a regular staple in your diet, or does it feel like a chore to include?

When prepared and cooked correctly, eggplant brings a wonderful 'meaty' texture to plant-based meals, and readily absorbs the aromas and juices of whatever it's paired with.

With their distinctive shape and colour, eggplant also provides a wealth of nutrition worth making the most of.

To get started, look for smooth, shiny, brightly-coloured produce for the best flavour and texture.

The first time I remember having eggplant was in a restaurant. It was thinly sliced, cooked (probably fried) and served with lemon juice and sautéed garlic. When I make it myself, I bake the eggplant and use lots of garlic. I am happy to entire the entire eggplant myself at one sitting.
Mmm! Sounds great mpwhe! We can definitely enjoy one to ourselves too!
