Is eggplant (aubergine) a regular staple in your diet, or does it feel like a chore to include?

How to enjoy
Cook and mash to make a smoke-y eggplant dip or Baba Ganoush.
Roast and stuff with rice, quinoa, veggies, or whatever you've got on hand.
Cube and add to barbecued veggie kebabs.
Toss through pastas or salads, and add to Mediterranean wraps, sandwiches and pizzas.
Use in a colourful homemade Ratatouille.

The first time I remember having eggplant was in a restaurant. It was thinly sliced, cooked (probably fried) and served with lemon juice and sautéed garlic. When I make it myself, I bake the eggplant and use lots of garlic. I am happy to entire the entire eggplant myself at one sitting.
