Green smoothie that tastes like summer

My health goals this year include cutting back on my coffee (from 5 cups per day) and increasing my iron levels.

In the course of working out a way to achieve this I came across green smoothies. I know, I know - I'm a little late to the green smoothie party, but I am super enthusiastic!

One of the pitfalls of green smoothies is that they taste, well...green. So I did a bit of tweaking and came up with a recipe that tastes just like summer!

Preparation time: 5 - 10 minutes

"Cooking" time: 3 minutes

Serves: 2 good sized glasses

Have all your ingredients out and ready to go.


Ingredients:

Handful of spinach
Leaves off one stem of kale (stems discarded)
Fruit - 1 mango OR 1 banana OR about 1 cup of pineapple chopped into small pieces
1 teaspoon of spirulina powder
1 tablespoon of LSA
Basil leaves
Mint leaves
3/4 cup of coconut water
1/4 cup of orange mango juice

Method:

1) Put all the ingredients into a blender and blend until smooth.

2) Pour into a fancy glass and sip it by the pool.

It truly is that simple!

Extra tips:

As with all my recipes I advise you to use whatever is growing in your garden or in season where you are living: eat local!

I have an over supply of basil and mint at the moment so in they go and I'm looking forward to trying this with brazillian spinach once it starts to grow a bit more.

The key with the fruit is to make it a strong flavoured one - that way you only need to use a little to "drown out" the green taste.

Stock up on your favourite fruit when it's on special/in season and freeze it in portion sizes.

Taste and adjust as you go - if you find it too "green" tasting to start with add a little extra fruit or juice. If you find that it tastes too fruity add a little more spirulina.
