I love my coffee; maybe too much! And it's hard to drink a cup of coffee without having some treat to go with it. For me, a sweet but healthy bread or a simple pound cake will do, like my healthy banana bread.
3 very ripe bananas
2 eggs, at room temperature
200g of whole-wheat flour
2 tablespoons of natural unsweetened yogurt
1 tablespoon of coconut oil, melted
1/2 a teaspoon of baking soda
A pinch of salt
3 tablespoons of coconut sugar
1 teaspoon of cinnamon
Preheat your oven to 190*C.
In one big bowl add the bananas and mash them with a fork. Add the eggs, melted coconut oil, yogurt, and mix with a hand mixer or a wooden spoon.
Add the dry ingredients and mix just until everything is fully combined.
Don't overmix, otherwise, your bread will become tough when baking.
Grease your bread pan with melted coconut oil and pour the batter in.
Bake for 50 minutes, or until a toothpick comes out clean.
