I love making banana bread and finding ways involve the kids in the kitchen too. I don’t usually have wholegrain flour in the pantry so developed this recipe to use the leftover crumbs in the bottom of the Weetbix box. The kids love crushing the extras that we need too. They also like mashing the bananas.
This easy recipe is full of fibre, does not contain refined sugar and can be made lactose or gluten free.
It tastes great cold although we love it served warm or slightly toasted!

Banana bread
Preparation Time: 10 minutes
Cooking Time: 55 minutes
Serves: 1 loaf
Ingredients
3 ripe bananas
4 Weetbix, crushed (gluten free, if required)
3/4 cup milk (lactose free, if required)
3/4 cup desiccated coconut
3/4 cup self raising flour (gluten free, if required)
1/2 teaspoon baking powder
2 eggs
3 tablespoon oil
2 tablespoon honey (or maple syrup), optional
Method
Preheat oven to 180 degrees. Line a bread tin with baking paper.
Mash the banana in a bowl. Add the Weetbix, milk, stir to combine and stand for 10 minutes.
Add the desiccated coconut, flour and baking powder. Stir to combine.
In a separate bowl combine the eggs, oil and honey.
Combine the egg mixture with the other ingredients.

The batter will be slightly firm
Spoon the batter into a lined bread tin and bake for 50-55 minutes until a skewer comes out clean.

Ready for baking!
