This is a fun (and convenient) way to present dessert, especially if you are at a barbecue, outdoor event or picnic. Prepare your dessert ahead of time to serve it cool or serve it just warm enough to hold in your hands. I have used a healthy lemon tapioca and yogurt combination, however you could easily create a decadent 'trifle in a jar' using jelly, custard, sponge cake and some peaches.
1 cup filtered water
3/4 cup tapioca seeds
100 grams brown sugar
1 tablespoon lemon juice
1 cup yoghurt
Bring the filtered water to the boil in a saucepan, then add the tapioca seeds, brown sugar and lemon juice.
Stir continuously, so that the mixture does not stick to the bottom of the saucepan, until the seeds become translucent.
Cooked tapioca ready for the jars
Spoon the first layer of mixture carefully into sterile glass jars.
Spoon a layer of yoghurt on top of the first layer, and repeat the layers so that you create a lovely striped effect. Place the lids on and present them in a lovely basket for your friends and family to enjoy.
Spoon the layers into the jars
Serve warm or cool and try not to feel too bad that you are eating your edible artwork.
