I recently sampled a delicious cacao granola which a guest had brought to my place. Soon after I took myself off to my local health food store and sure enough, they stocked the granola but it was $16 for a small packet; I decided to try my hand at a healthy homemade granola and it turned out amazing.
Don't let the long list of ingredients deter you, it's really easy and you can change up the dry ingredients to suit your personal taste.
3 cups rolled oats
3 cups puffed buckwheat (or any other puffed cereal)
1 cup whole raw almonds
1/2 cup coconut flakes
1/2 cup pepitas
1/2 cup sunflower seeds
1/4 cup chia seeds
1 tablespoon cacao powder
1 scant tablespoon cinnamon
1/2 teaspoon sea salt
1/2 cup honey
1 tablespoon vanilla extract
1/2 cup coconut oil
1/2 cup apple juice
Preheat the oven to 150 degrees and line two baking trays with baking paper.
Combine the dry ingredients (except the cinnamon and cacao) in a large bowl.
In a saucepan gently heat the honey, oil, apple juice and vanilla.
Take off the heat and whisk in the cinnamon and cacao.
Add the wet mix to the dry ingredients mix thoroughly so that all the dry ingredients are coated.
Spread the mixture evenly on the two trays and bake for one hour, mixing a little every fifteen minutes.

For maximum crunch allow the mix to cool completely before storing.
