How to sneak in more veg

We all know that veggies are some of the most nutrient dense foods around, but actually fitting more of them into your day can prove a challenge.

While snacking on raw veggie sticks or tucking into a thick leafy salad for lunch are great options, you can also get a bit more creative and hit your five-a-day without noticing!

*Vegetable mash - Depending on how game you are, you can either completely mix up your next mash by using sweet potatoes, carrots, pumpkins, chickpeas, beetroot, parsnips, whatever you desire, instead of the standard potatoes, or you could mix in half of another vegetable to conceal the taste more.

*Soups - Root vegetables work particularly well in soups, and if blended, are almost indistinguishable. Again, sweet potatoes, carrots, pumpkins, parsnips, all work well here, but you could also try onions, leeks, capsicums, zucchinis or cauliflower. Just cook until soft and blend, or chop very finely before adding.

*Pasta - Try adding vegetables to dishes you already love so that you don't have to adjust too extremely. How about finely chopping some carrots, onions or capsicums and adding to your next pasta sauce or lasagna dish?

*Smoothies & Juices - Your best bet here is to start mixing vegetables into predominately fruit based smoothies and juices. This way you can still enjoy that sweet hit without being too put off by unusual flavours. Dark leafy greens such as kale and spinach pack a huge nutritional punch for their weight, and celery hardly registers once blended.

*Baked goods - Bear with me. Beetroot and avocado are two powerhouses that actually work beautifully in baked goods such as brownies, cakes and muffins. There are a lot of recipes to tempt you out there, but start with small quantities of either to get you started.

*Veggie chips - Baked kale chips may be the new 'it' snack, but did you know you can make veggie chips out of sweet potatoes, carrots, tomatoes, parsnips, zucchini and essentially any root veg? Simple finely slice the vegetable, scatter over a baking tray with a drizzle of oil (and salt or herbs if desired), and bake until crisp. How could you possibly resist?
