Ingredients
2 tablespoons white wine vinegar
4 tablespoons finely grated or zested parmesan cheese
Method
Prepare your kale by washing, drying, and tearing the leaves into bite size pieces, discarding stalks and tough stems.

Prepare your dressing in the salad bowl by whisking all ingredients together until mixed well.
For the fun part - the best way to ensure the kale is thoroughly dressed is to add the kale and mix it with the dressing using your hands, gently massaging it through.
