Kale Salad with Garlic & Parmesan Dressing

If you thought there was no way to enjoy eating raw kale, think again. This simple salad recipe is a big hit whenever I make it or take it to parties and barbecues; the creamy garlic dressing complements the bitterness of the kale in a spectacular fashion. And it's incredibly easy to throw together in a hurry.

Ingredients
1 bunch of kale
6 tablespoons olive oil
2 tablespoons white wine vinegar
4 tablespoons sour cream
4 tablespoons finely grated or zested parmesan cheese
2 cloves minced garlic
Salt and pepper to taste

Method
Prepare your kale by washing, drying, and tearing the leaves into bite size pieces, discarding stalks and tough stems.

Bite size pieces of kale


Prepare your dressing in the salad bowl by whisking all ingredients together until mixed well.

For the fun part - the best way to ensure the kale is thoroughly dressed is to add the kale and mix it with the dressing using your hands, gently massaging it through.

Hi Clare I will let you know when I do try the salad with yought I have recently had an enormous bulging disc in my spine and not doing much food preparation Doing my recovery .Thanks Lee
Like the sound of this salad I was thinking I was wondering to replace the sour cream with a natural flavour yogurt ? If you have a food processor blitz the ingredients before tossing through the Kale leaves . Lee
I'm sure that would work well Lee! The yoghurt would certainly be a healthier option - maybe try it with a little less than 4 tablespoons or it may end up too sour. Give it a go, would love to hear how you go :)
