I love lentils. I have found them to be a great tasting substitute for meat. One of the first recipes I found to use with lentils was tacos, one which I have individualised over the years and has become a favorite for my family.

Method: 1. Sauté onion and garlic in olive oil until onions are soft.
2. Mix lentils and spices, add to the onions, garlic, and olive oil and sauté for 1-2 minutes.
3. Add chicken stock and bring to a boil. Once boiling, lower heat and simmer for 20 minutes. Adjust cooking time to achieve the texture you enjoy most. Cook longer than 20 minutes if you prefer a softer texture to the lentils.

Enjoy! Add lentils to soft or crispy taco shells and top with lettuce, tomatoes, onions, cheese, salsa and guacamole, or whatever you like on your tacos! As you get to know this recipe, you can increase or decrease the amount of spices to your liking to get your very own perfect lentil taco.
