Lentil Tacos

I love lentils. I have found them to be a great tasting substitute for meat. One of the first recipes I found to use with lentils was tacos, one which I have individualised over the years and has become a favorite for my family.

Lentils are nutritious, low calorie, and belong to the legume family. They are good sources of protein, fibre, folate, magnesium, and iron. Lentils have been found to lower the risk of heart disease and lower cholesterol. Lentils have also been associated with benefits to the digestive system and stabilising blood sugar levels. All in all, lentils are a great addition to your diet and replacement for meat for those looking!

Ingredients:
1 cup red lentils
2 tablespoons extra virgin olive oil
1/2 cup onion (whatever color or type you like), diced
1 garlic clove, crushed and minced
2 teaspoons cumin
1 teaspoon chili powder
1 teaspoon smoked paprika
1 teaspoon oregano
1/2 teaspoon sea salt
Pepper to taste

Method:
1. Sauté onion and garlic in olive oil until onions are soft.
2. Mix lentils and spices, add to the onions, garlic, and olive oil and sauté for 1-2 minutes.
3. Add chicken stock and bring to a boil. Once boiling, lower heat and simmer for 20 minutes. Adjust cooking time to achieve the texture you enjoy most. Cook longer than 20 minutes if you prefer a softer texture to the lentils.

Add lentils to soft or crispy taco shells and top with lettuce, tomatoes, onions, cheese, salsa and guacamole, or whatever you like on your tacos! As you get to know this recipe, you can increase or decrease the amount of spices to your liking to get your very own perfect lentil taco.

Toss tasty lentils on a tortilla with your favorite toppings and enjoy! Own image, right before I ate it.


Store:
Leftovers in a sealed container will last 3-5 days in the refrigerator.

We love tacos and I love adding lentils to most meat dishes! I cheat and use canned lentils. The family don't even know they are in there.
