Mango, Sweet Potato & Tomato Curry

One of the more exotic curries in our repertoire, all these flavours surprisingly combine beautifully, and provide you with a colourful and healthful meal.

High in vitamin A and vitamin C, your eyes, skins, hair and nails will thank you for such a rich dish - as will your tastebuds!

Due to the protein and fibre packed quinoa, you wonít need to serve this curry with any rice or naan, simply enjoy as is.

Minutes 30

Ingredients
1/2 cup quinoa
1 tablespoon olive oil
1 brown onion, finely sliced
1 teaspoon ground turmeric
1 tablespoon curry powder
2 teaspoon garlic, chopped
400g can chopped tomatoes
150ml can lite coconut milk
200g sweet potato, cubed
350g mango, cubed

Method
Heat the oil in a large saucepan and add the onion, turmeric, curry powder and garlic. Cook until onion softened and fragrant.



Stir through the tomatoes, coconut milk and sweet potato and bring to the boil. Reduce heat to a simmer and cook for 10 minutes or until sweet potato becoming tender.



Add the quinoa and 1/4 cup water. Cook for a further 15 minutes until quinoa fluffy and sweet potato cooked through.



Mix through the mango, and serve once warmed through.
