Millet Patties

Millet is a staple food throughout much of Africa and Asia and it is very high in nutrients - the trick is knowing how to prepare it. Millet is the perfect grain for gluten free diets, and these patties are a delicious and healthy way to present it too.

Millet Patties


Ingredients:

1/2 cup millet
2 cups water
6 mushrooms
1 zucchini
2 tablespoons chopped parsley
1 onion
1/2 cup plain flour
2 eggs
1/2 teaspoon turmeric
1/2 teaspoon cumin powder
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons coconut oil

Uncooked millet


Method:

Rinse the millet and boil it in the water - using the absorption method. Allow the cooked millet to cool. It should look "fluffy" similar to cooked rice.

Chop and fry the onion, zucchini and mushrooms.

Cook the millet


Mix together the spices, chopped parsley, and eggs with the millet, fried onions, zucchini and mushrooms mixture.

Form the millet mixture into balls and fry them in the coconut oil, until golden on each side (about 3 -5 minutes).

Fry the patties


Serve with a simple mayonnaise dressing, a cherry tomato, and a fresh garden salad. Enjoy.
