Paleo pancakes recipe

Necessity is the mother of invention, which explains the culinary innovations of paleo diet devotees; when you need to have pancakes and grains are off limits, you have to get creative. To date there are hundreds of paleo pancake varieties which instead of wheat flour, use items including pumpkin, sweet potato, pineapple, or coconut flour as a base.

If you're new to paleo cooking, or are looking for a nutritious new breakfast option, you might like to start with this simple three ingredient pancake recipe.

Serves: one person
Time: ten minutes

Ingredients
One ripe or over-ripe banana
One egg
Good pinch of cinnamon
Optional: add half a tablespoon of coconut or almond flour for a more substantial pancake.

Method
Mash the banana in a bowl or jug.
Add the egg and cinnamon (and flour if using it) and whisk or beat for ten seconds.

Quickly beaten or whisked batter


Best cooked slowly on a low to medium heat in a heavy based pan (not too high or you'll get that burnt egg taste) with coconut oil or olive oil.
Serve with honey, fresh fruit, or if you're not strict about being paleo, add some natural yoghurt.

These paleo pancakes are surprisingly tasty, satisfying, and nutritious to boot. To feed more than one person, adjust the quantities accordingly.
