While 2014 saw a huge increase in the popularity of kale as a superfood, many dietitians are suggesting that the next big food trend will be cauliflower.

This year has seen a huge boost in the consumption of kale as it pops up all over in supermarkets, farmers markets, and on the menus at juice bars and cafes.
Additionally, with the popularity and rise in gluten free foods, cauliflower can, in many recipes, be used as a suitable replacement. Particularly for items such as pizza crust. Also for those watching their carbohydrate intake in general, mashed cauliflower is a wonderful potato replacement or it can be blended raw to replace rice.
To make a cauliflower pizza crust:
Cauliflower in general is rather versatile and can be mashed, grilled, barbecued, served on its own, in salad or tossed with herbs, vinegars and oils.
With regards to healthy eating and making wise food choices, cauliflower stands in a class of its own. Closely related to broccoli, it is of the same species as cabbage and Brussels sprouts. It's rich in vitamin C, vitamin K, folate, and potassium, and is an excellent source of dietary fibre.
