Cauliflower Rice

Sometimes it's nice to eat a meal without grains, although that isn't always easy to do. A meal without any sort of grain - wheat, rice, corn etc, might only leave you with a side of mash potato, but then along came cauliflower rice, which is simply a cauliflower head, made to look like rice.

Author Elana Amsterdam has been making cauliflower rice for over a decade, which she says has helped her with health issues, including celiac disease. Her low-carb 'dirty rice' recipe can found on Jamie Oliver's website.

There are various other recipes with which flavours are added to cauliflower rice (give this recipe a try if you like Thai flavours), but in its simplicity you'd be food processing, grating or thermomixing (on reverse speed 5 for 5 seconds) until your cauliflower resembles rice. You can then steam it or cook your cauliflower until soft, and use as you would normally eat rice.

Often overshadowed by its greener cousin broccoli, caulflower packs a mighty nutritious punch, filled with an array of vitamins, minerals, antioxidants, other phytochemicals and is a great source of fibre, too.

Next time your meal asks for an accompanied side of rice, why not give cauliflower a turn instead? Your body will appreciate it.
