Ever wondered how Demi Moore looks half her age, even in a bikini? Or how Uma Thurman, Alicia Silverstone and Natalie Portman always look great? Apparently the secret to their glowing skin and great body lies in a special eating regime - it's called the Raw Food Diet.

Recently I have been reading a lot about this Raw Food Diet which can not only assist in weight loss, but also helps keep the body's internal system clean.This diet is making waves in the USA and is quickly picking up pace in other countries.

Being on the Raw Food Diet entails eating uncooked fruits and vegetables along with some nuts, seeds and sprouts, as it is believed that heating destroys a majority of the vitamins and minerals which are optimal in their natural or raw state. The only heating that is allowed is with a dehydrator below 40-49 degrees celsius to retain the natural enzymes of the food.

Besides weight loss, raw foodists claim they notice an improvement in skin appearance, increased mental sharpness and improved digestion.
With busy lifestyles it is almost impossible to follow a strict Raw Food Diet; I personally just try to incorporate it in my diet where ever and when ever possible. The Raw Food Diet isn't for everyone, and it may be worth adding in a few raw meals to your usual diet to see how it sits with you.

Here's a quick and simple raw dessert tart recipe.
This dessert can be made ahead and is really easy to make.

MIXED BERRY TART



Ingredients
11/2 cups of mixed berries (fresh or frozen)
2 cups mixed nuts - walnuts, almonds and cashew
2 tablespoons orange juice
cup dates soaked in hot water to soften

For the chocolate ganache

Ingredients
cup cacao powder
1 teaspoon vanilla extract
cup coconut oil melted
cup raw coconut sugar or agave (or any desired sweetener)
1 ripe avocado mashed

4 round shaped cutters or silicon moulds

Method
Soak the nuts in water overnight.
Next morning drain the water and crush the nuts along with the dates in a blender to a fine powder.
Place a sheet of grease proof paper on an oven tray and place the cutters on them to make a base for the tart.
Mix the orange juice with the nut and date mixture and press the mixture at the base of the cutters making the first layer.
Next top with mixed berries and freeze for 1 hour.
Whisk all the ingredients for the chocolate ganache and place on top of the berries to make the final layer.
Let it set in the fridge for some time, take out the cutters, and enjoy.
