This is my superfood twist on a classic dessert, which is a favorite in our household. The combination of chia seeds and coconut works well to make this healthy and very delicious sweet treat.

Ingredients:

4 apples
1/2 cup water
1 cup oats
1 cup desiccated coconut
1/2 cup sugar
1/2 cup almond meal
2 tablespoons chia seeds
4 tablespoons coconut oil

Method:

Combine the oats, desiccated coconut, almond meal, sugar, chia seeds and coconut oil together in a mixing bowl. Rub the ingredients together until it resembles "crumble" topping.

Dry ingredients


Roughly chop the apples and stew them in a little water in a saucepan for five minutes, until they soften slightly.

Add the stewed apples to a baking dish, then cover them with the dry ingredients mixture.

Cook the crumble in a moderate oven for 35 minutes and serve hot topped with a dollop of coconut yogurt.
