Ever been left a little stumped by the terms used in recipes? Here we dispel the confusion around ‘boiling’ and ‘simmering’.

Boiling requires a vigorous bubble used to evaporate liquids, whereas a simmer implies a moderate bubble to cook. A gentle simmer is more suited for poaching or lightly cooking meats, and a more energetic one best for pastas, noodles, rice and vegetables.
