Healthy Breakfast Muffins
Muffins, if made in a healthy way, could be eaten as a morning meal that provides energy for the day ahead.
These banana and sunflower seed muffins donít contain any sugar; the sweetness comes from the addition of honey and the natural sweetness of the ripe bananas.
3 very ripe bananas
1/3 cup honey
ľ cup sunflower oil
1 large egg
1 teaspoon vanilla extract
1 cup whole grain flour
Ĺ cup coconut flour
1 teaspoon baking soda
ľ teaspoon sea salt
1 cup fresh or frozen berries
100g sunflower seeds
