Here is a dessert, or breakfast treat that involves no cooking whatsoever, is gluten free and packed full of protein, nutrients and antioxidants
. It sounds too good to be true, but it also tastes fantastic. The flavor reminds me of a creamy custard or maybe tapioca pudding.
Coconut, Strawberry & Chia Puddings
Chia seeds themselves can easily be found in the health food section of your local supermarket, however they originate from Mexico, where the Mayan people have been consuming them for thousands of years.
Chia seeds from the supermarket
1 cup coconut milk
2 tablespoons chia seeds
1 tablespoon maple syrup or honey (optional)
2 tablespoons strawberry pulp (optional)
Add the chia seeds to the coconut milk
Chia seed mixture
Shake the mixture
Spoon the mixture into glasses
