This summer season, you can't go past this icy treat that's really yummy and super good for you. "Chia" means strength in Mayan language, which shows that the ancient Mexicans knew just how good chia seeds were for our health. They are packed with nutrients, are an excellent source of protein and even contain immune boosting antioxidants. These days you can easily find Chia seeds in the health food section of the supermarket and this recipe is simple and easy for anyone to prepare.

1 cup coconut milk
2 tablespoons chia seeds
1 tablespoon maple syrup or honey (optional)

Step 1:

Place the coconut milk in a jar with a sealed lid, then add the Chia seeds and shake well. You can also add the maple syrup or honey at this point, or leave it out to maintain a more pure coconut flavor.

Step 2:

Leave the sealed jar in the fridge for about two hours, so that the chia seeds can absorb the coconut liquid - as if by magic, they should expand to four times their original size and become translucent and gelatinous. By this stage, you will have made a kind of creamy custard chia pudding and may wish to add some flavor, such as strawberry.

Put them in the freezer

Step 3:

Spoon the chia coconut mixture into ice block containers and store them in the freezer until they are frozen. Enjoy your healthy Chia Coconut Ice Blocks for afternoon tea on a hot summer day.
