Pumpkin and Coconut Soup
Forget the cream - a great ingredient to use in your pumpkin soup is coconut milk!
I also omit the potatoes, as a low-carb alternative.
There are so many great recipes for traditional pumpkin soup, so here's mine.
Half a pumpkin
One large brown onion
1 teaspoon garlic paste
Sprinkle of all spice
1 cup of coconut milk
1 teaspoon of vegetable stock
1 cup of water
1. Chop all whole ingredients
2. Place everything in a large pan
3. Cook for 40 minutes on medium heat
4. Optional - place one cup of soup in the blender, for smoother texture
