Pumpkin Nut And Fruit Loaf

This tasty loaf contains nutritious pumpkin, dried fruit, nuts and wholemeal flour. Mixed dried fruit can be used or sultanas, currants, raisins or chopped dates. The sweetness comes from the apple juice and dried fruit. The nuts can be omitted if preferred. The loaf freezes well.

Ingredients
1 cup cold mashed pumpkin
1 3/4 cup wholemeal SR flour
½ cup apple juice
½ cup dried fruit (mixed, sultanas, raisins, currants or chopped dates)
¼ cup chopped walnuts or almonds
1 egg, lightly beaten
1 teaspoon mixed spice
1 teaspoon bi carb soda

For topping
1 heaped tablespoon sliced almonds

Method
Bring dried fruit and apple juice to the boil in a large saucepan.

Remove from heat, stir in bi carb soda and let cool.
Add mashed pumpkin and stir in.

Stir in egg and chopped nuts.

Add sifted SR flour and mixed spice.

Mix in saucepan.

Spoon into a greased lined loaf tin or use a silicone loaf pan.

Top with sliced almonds.

Bake at 180C (moderate oven) for 1 hour or until a skewer inserted into the loaf comes out clean.



Baked Loaf

Allow to cool for about 10 minutes and then remove from tin.
Allow to cool completely.
Slice and serve with your choice of spread.
