Quick and Easy Chicken Noodle Soup
This soup is very easy to make, is delicious and perfect for the cold weather, or when you're under the weather.
2 small organic chicken thighs
1 garlic clove
1 stalk of celery
2 tablespoons of fresh parsley
1 tablespoon of dried vegetables
50g of thin soup noodles
The only thing we have to do is to prepare all the ingredients and put them in to cook. That takes only 5 minutes and then we wait.
Clean and take the skin off the chicken thighs. Put them in the pot. Peel the onion and garlic, slice the celery and carrots and chop the parsley.
Add every ingredient to the pot, cover with 3L of water and bring to a boil.
When it starts to boil, turn the heat to low and let the soup simmer for 30 minutes approx. until the chicken is cooked through.
Take the chicken out and shred it. Add the shredded chicken back to the pot, add more parsley if you want and add the noodles.
Take the onion and garlic out of the pot and cook the noodles according to the package instructions. Serve hot.
