I absolutely love cheese especially blue vein types. Unfortunately, most types of cheese, especially those with lots of flavour are high in fat. I came up with this easy recipe using two ingredients which satisfy my love of tasty cheese but is lower in fat, salt and calories than blue vein cheese. This dip is nice with celery and carrot sticks. I find I eat less dip when served with vegetable sticks than with crackers, as it takes longer to chew vegetable sticks. They are lower in fat and calories than crackers and contain a variety of nutrients.

Ingredients
100g smooth low fat ricotta cheese
20g blue vein cheese (more for a stronger taste but more means increased fat and calories)

Method
• Leave the blue vein out of the fridge for a while to soften. Alternatively it can be softened in the microwave on a low setting for a few seconds.
• Place both cheeses in a bowl.

• This dip can be used as a substitute for butter or margarine on a salad sandwich.
