For most cultures around the world, spices form an integral part of cuisine and the dining experience.

Spices are not only revered for imparting their exotic and vibrant flavours, but also for their numerous and impressive health benefits.

If you can spare the time, grinding whole spices with a grinder or mortar and pestle will bless you with a fresher, richer flavour than ready ground varieties.

1 teaspoon ground spice equates to:
12 cardamom pods
½ whole nutmeg
¾ teaspoon coriander seeds
15 cloves
15 allspice berries
1 ½ whole star anise
1 teaspoon cumin seeds
