Quick Tip #51: Why you should eat your crusts

The saying that the 'crusts are the best part' is actually true. The cooking process causes a chemical reaction that creates pronyl-lysine in the crust. Pronyl-lysine is an antioxidant that fights cancer.

For this reason, toast is better for you than fresh bread. But be careful, burnt toast creates carcinogens, which increase the chances of cancer.

The smaller a loaf of bread, the more surface area is covered by crust, and therefore healthier. Also, the darker the bread - rye, wholemeal, etc, the more antioxidants it has, compared to white.
