Quick Tip #52: How to peel an avocado

An avocado is rich in carotenoid antioxidants (beta-carotene and lycopene) and heart-friendly fats.

Research has shown that the dark green flesh immediately under the peel has the highest concentration of antioxidants - hence peeling correctly is important to get maximum health benefit.

Cut the avocado in half, being connected by the seed. Now twist and separate the halves to remove seed. Cut each piece lengthwise, hold the end and peel like a banana. You will see that none of the dark green flesh gets wasted with the peel.
