Quick Tip #73: The power of the pepita

Don't be fooled by their size - the pint sized pepita, or pumpkin seed, is a powerhouse of essential nutrients. Containing a host of vitamins, minerals, and essential fatty acids, these dried seeds are a worthy addition to any diet.

While all can benefit from pepitas, they are particularly beneficial to vegans and vegetarians as they are a rich source of protein and iron. Tasty and versatile they make for a simple low-calorie snack, or as a crunchy garnish on top of salads and hot meals.

One of my favourite ways to use pepitas is to make a homemade tamari protein mix and sprinkle it on salads, steamed vegetables, or a simple lunch of brown rice and avocado.
