Salads are delicious in the summer time, and can be very filling. There are endless varieties of salad; today’s salad is without greens, just vegetables and quinoa. If you haven’t tried quinoa before, I really recommend you to do, it’s tasty and so healthy.
2 small carrots
100g of cooked quinoa
50g of red cabbage
30g of feta cheese
10 cherry tomatoes
Start by preparing all your ingredients. Wash and cook the quinoa according to packet directions.
Cut the carrots julienne, slice the radishes, cut the tomatoes in 2, slice the cabbage, and cut the cucumber into little cubes.
Add all the ingredients into a big bowl. Add the cooked quinoa and the cheese and stir the salad.
Prepare the dressing.
2 tablespoons of extra virgin olive oil
The juice from 1/2 a lemon
1/2 a teaspoon of garlic powder (or 1 fresh clove, minced)
Chili flakes (optional)
Add all the ingredients into a small bowl and stir.
Pour the dressing on top of the salad only when you are ready to serve it (to prevent sogginess).
