It will not be difficult to tempt your vegetarian friends with these impressive treats. It doesn't take too much effort to roast a few capsicums and stuff them with the wonderful grain quinoa and an assortment of your favorite vegetables.
Quinoa Stuffed Capsicums
1 cup cooked quinoa
3 tablespoons pesto
1/2 cup green peas
1 ear corn
1/2 cup grated cheese (optional)
Carefully, slice the tops off the fresh capsicums and scoop out their seeds.
Take out the capsicums seeds
Roast the hollow capsicums in a moderate oven for 45 minutes.
Capsicums and quinoa
Grate the carrot into the cooked quinoa, adding the corn, peas, cheese (optional) and pesto (for added flavor). Mix the quinoa and vegetables together, then spoon the mixture into each of the roast capsicums.
Spoon the quinoa into each capsicum
Sprinkle the tops with extra grated cheese before returning the quinoa stuffed capsicums to the oven for a further 20 minutes. Serve hot with a drizzle of olive oil and perhaps a tofu steak.
