Red Lentil Dhal

There is something so holistically nourishing about a warm dhal. Packed full of plant protein and health-promoting spices, this simple dhal of red lentils is both easy to digest and filling.



I recommend serving with a portion of steamed brown rice or a warmed pita bread, but feel free to enjoy however you wish. I sometimes top this dish with half a sliced avocado for some feel-good fats.

Ingredients
1 cup red lentils (dry)
3 teaspoons ginger, grated
1 cinnamon stick
1 tablespoon olive oil
1 brown onion, finely chopped
2 teaspoons garlic, crushed
2 teaspoons turmeric powder
1 teaspoon cumin powder

Method
In a large saucepan, place the lentils, ginger and cinnamon with 3 cups of cold water and bring to the boil. Reduce heat and stir, simmering, for 10 minutes. Remove from heat.



Using a large frying pan, heat the oil and add the onion, cooking until beginning to soften.



Add the garlic, turmeric and cumin to the onion, stirring for 2 minutes or until strongly fragrant.



Transfer the lentils to the frying pan, mix through thoroughly and serve.
