Roasted Sweet Potato Chips with Herbs de Provence

If youíre anything like me, you love fries! Baked sweet potato fries provide a healthy alternative to potato chips; and they are higher in fibre, vitamins A and C, and contain less calories than potatoes.

Ingredients

1 sweet potato
1 tablespoon of oil of your choice (I used grapeseed oil)
Salt and pepper
Herbs de Provence*

Itís so very easy to make these roasted sweet potatoes. Peel, wash and cut them in wedges.
Arrange on a baking tray in a single layer, drizzle oil and season with salt, pepper, and the herbs.



Bake the potatoes at 200*C for 25 minutes, or until golden and delicious.

Herbs de Provence is a mixture of dried herbs that goes extremely well with meat or roasted vegetables. You can buy it at supermarkets or you can make it at home (typically contains dried thyme, rosemary, savory, oregano, basil, marjoram and fennel).
