This recipe is very simple and super tasty. The spiced chickpeas are rich in nutrients and make a great healthy snack option, keeping you full between meals. The garbanzo beans (another name for the chickpeas) contain high amounts of fibre, protein and iron.
Cooking time: 40 minutes
Makes: 9 servings (¼ cup each)
Ingredients: ¼ cup olive oil
½ tablespoon chili powder
2 tablespoons curry powder
¼ teaspoon garlic salt
2 cans of chickpeas, rinsed, drained and patted dry
Preheat the oven to 200°C and line a baking sheet with parchment paper.
In a large bowl, combine the olive oil, chili powder, curry powder and salt.
Add the chickpeas to the oil mixture and mix all the ingredients.
Spread the chickpeas on the baking pan. Cook the chickpeas for 40 minutes or until crisp, stirring every 10 minutes.
After cooking, allow the chickpeas to cool down.
Store the spiced chickpeas in an airtight container, at room temperature, for up to 3 days.
