This healthy summer ice-cream is a delicious treat that can be made within 5 minutes. It is low FODMAP, refined sugar, lactose and gluten free.
You can eat it out of a bowl, freeze in icy pole moulds or top with your favourite toppings.
This ice-cream not only tastes good but has fantastic health benefits.
Strawberries and bananas are considered
as they are high in potassium, which is beneficial for;
healthy brain development and maintenance
improving memory and recall.
Potassium is also an essential nutrient for maintaining healthy
Strawberries and bananas are low GI which are slowly digested, absorbed, metabolised and will not cause sugar spikes.
They are also natural sweeteners which means that you do not need to add any sugar to make it taste great.
This is a delicious and healthy summer ice-cream
1 hour freezing time if making icy poles
500g frozen strawberries
1 frozen banana
1/2 cup coconut milk (or use
1 teaspoon vanilla essence (to taste)
Blend the strawberries, banana and coconut milk (or yoghurt) until smooth.
A stick blender works well
Taste and add vanilla essence, if desired, and stir in.
Serve and eat immediately or pour into 6 icy pole moulds and freeze for 1 hour or until set.
