Sunshine orange and spinach salad

I discovered this salad at an Italian restaurant recently. They served it with an aged cheese, but to keep it fresh and vegan I've gone without and still packs a punch.



In the UK the best oranges are imported during autumn and winter from Spain because they've just come into season. Think delicate clementines and sizeable oranges, they are wonderfully fragrant.

Healthy tip
The pith (white bites) on orange is full of vitamin C, bursting with it. Do not throw it away or peel it. Leave it on the segments and benefit from the health benefits like brighter eyes, stronger nails and healthier insides.

Ingredients
1 orange
Handful fresh baby spinach
2 carrots
3 tablespoons extra virgin olive oil
Half teaspoon crushed black pepper
3 basil leaves

Method
Peel the carrots.



Slice the orange into segments.



Add the carrots to the bowl and add the pepper.



Top with the spinach, basil and orange segments.



Season with the oil.



Serve.
