Inspired to make a cleaner and simpler version of a dish I ate at a Chinese restaurant in Liverpool, this Three Precious Jewels recipe is baked instead of deep-fried, and remains filling and tasty without the added sugars, salts, oils and preservatives.
Chinese takeout made quick, easy and super healthy!
Ingredients 1/2 cup brown rice
300g tofu, cubed
2 carrots, cut into rounds
1 broccoli head, cut into florets
2 teaspoons garlic, minced
2 teaspoons ginger, sliced
2 teaspoons tamari soy sauce
Preheat oven to 175C.
Place the brown rice and 1.5 cups of water in a small saucepan and bring to the boil. Reduce to a simmer and cook for 10-15 minutes, or until fluffy and all water absorbed. Remove from heat and set aside.
Spread the tofu, carrots and broccoli across a lined baking tray, and toss with the garlic and ginger.
Cook for 20-25 minutes or until brown and crispy.
Served with a warmed pita bread
Remove from oven and serve atop a bed of steaming brown rice. Drizzle a teaspoon of soy sauce over each bowl and enjoy!
